3-Chocolate Fondant with Peach Soup





Ingredients

For the Chocolate Fondant:

  • 150 g of chocolate
  • 50 g of butter
  • 5 eggs
  • 150 g of granulated sugar
  • 20 g of cornstarch
  • 20 g of flour
  • A pinch of salt
  • 2 drops of vanilla extract

For Garnish:

  • 100 g of raspberries
  • 20 g of cocoa powder

For the Peach Soup:

  • 1 kg of peaches
  • Juice of half a lemon
  • 2 tablespoons of lemon blossom honey

Chocolate Fondant with Peach Soup

Preparation:

  1. Melt the Chocolate and Butter: Melt the chocolate and butter in a double boiler.
  2. Whisk the Egg Yolks: Whisk the egg yolks with the sugar until the mixture turns pale.
  3. Combine Ingredients: Incorporate the melted chocolate and sifted flour with cornstarch into the egg mixture.
  4. Beat the Egg Whites: Beat the egg whites with a pinch of salt until stiff peaks form, then gently fold them into the mixture.
  5. Bake: Pour the batter into a buttered and floured 22 cm diameter cake pan. Bake in a preheated oven at 180°C (356°F) for 20 minutes.
  6. Prepare the Peaches: Peel the peaches. Blend half of them with honey, vanilla extract, and lemon juice. Cut the remaining peaches into small cubes.
  7. Mix the Peach Soup: In a bowl, mix the peach cubes with the peach coulis.
  8. Cool and Serve: Let the chocolate fondant cool for 15 minutes before removing it from the pan. Slice the fondant and serve it with the peach soup and raspberries.

Tip: To save time, use canned peaches in syrup.
