1- Linguine with Seafood



Ingredients:

  • 380 g of Linguine
  • 3 liters of water
  • 1 tablespoon of salt

For the sauce:

  • 1 tablespoon of finely chopped onion
  • 1/2 clove of minced garlic
  • 20 g of butter
  • A dash of oil
  • A dash of lemon juice
  • 8 saffron threads
  • 200 ml of fish stock or shrimp broth
  • 100 g of peeled shrimp
  • 100 g of calamari rings
  • 400 g of clams
  • 4 tablespoons of crème fraîche

For garnish:

  • Parsley leaves
  • Lemon slices

For the shrimp broth:

  • Shrimp shells
  • 1/4 of a lemon
  • 1/4 of a red bell pepper
  • 1 bay leaf
  • Sprigs of thyme
  • 3 cloves of garlic
  • 1 liter of water

Preparation:

Shrimp Broth:

  1. In a pot, combine all the shrimp broth ingredients.
  2. Bring to a boil, reduce the heat, and let it reduce by half.
  3. Remove from heat and let cool before straining through a fine sieve.

Pasta:

  1. Cook the pasta in boiling salted water for 8 minutes.
  2. Meanwhile, heat the butter and oil in a pan over low heat and sauté the onion and garlic.
  3. Add a dash of lemon juice, the shrimp broth, and saffron threads. Let simmer for 5 minutes.
  4. Add the clams, calamari, shrimp, drained pasta, and crème fraîche. Continue cooking on low heat, stirring until the pasta is “al dente,” about 4 to 6 minutes.
  5. Serve the linguine on a serving dish and garnish with parsley leaves and lemon slices.

Tip: To remove any sand from the clams, soak them in salted water for 30 minutes, then drain and rinse until the water runs clear.
