1- Linguine with Seafood
Ingredients:
- 380 g of Linguine
- 3 liters of water
- 1 tablespoon of salt
For the sauce:
- 1 tablespoon of finely chopped onion
- 1/2 clove of minced garlic
- 20 g of butter
- A dash of oil
- A dash of lemon juice
- 8 saffron threads
- 200 ml of fish stock or shrimp broth
- 100 g of peeled shrimp
- 100 g of calamari rings
- 400 g of clams
- 4 tablespoons of crème fraîche
For garnish:
- Parsley leaves
- Lemon slices
For the shrimp broth:
- Shrimp shells
- 1/4 of a lemon
- 1/4 of a red bell pepper
- 1 bay leaf
- Sprigs of thyme
- 3 cloves of garlic
- 1 liter of water
Preparation:
Shrimp Broth:
- In a pot, combine all the shrimp broth ingredients.
- Bring to a boil, reduce the heat, and let it reduce by half.
- Remove from heat and let cool before straining through a fine sieve.
Pasta:
- Cook the pasta in boiling salted water for 8 minutes.
- Meanwhile, heat the butter and oil in a pan over low heat and sauté the onion and garlic.
- Add a dash of lemon juice, the shrimp broth, and saffron threads. Let simmer for 5 minutes.
- Add the clams, calamari, shrimp, drained pasta, and crème fraîche. Continue cooking on low heat, stirring until the pasta is “al dente,” about 4 to 6 minutes.
- Serve the linguine on a serving dish and garnish with parsley leaves and lemon slices.
